As is often the case, the most visceral and authentic expressions of a food culture can be found on street level. In a place where food is so central to daily life it is no surprise how much street food is embedded into the fabric of towns and cities across India. Songs have been written about the street food of Mumbai, where stalls cluster at beaches and around railway stations. Chandni Chowk, the main street of Old Delhi is often called the food capital of India, famous for its street food with the Paranthewali Gali, one of its narrow side streets, becoming a gastronomic mecca for its paratha fried breads.
