Sacla classic pesto spiedini
You can make this using any combination you like - mix it up with olives, courgettes, peppers, cubed aubergine or onion.

Ingredients

4 tbsp Sacla' Classic Pesto
1 clove garlic, finely chopped
drizzle of extra virgin olive oil
1/2 ciabatta loaf, roughly torn into 8 pieces
250g mozzarella, cubed into 12
12 cherry tomatoes

Cooking Instructions

Firstly preheat the grill to high.

Next mix the Sacla' Classic Pesto and garlic together, drizzle them in olive oil and combine them until it's a nice loose consistency.

Now toss the bread, cheese and tomatoes in the pesto dressing and thread them alternatively on to wooden or metal skewers. Make sure the skewers are tightly packed. (One quick tip, if you're using wooden skewers, soak them for 30 minutes in cold water before using.)

Pop the skewers under the grill, turning once, cook for about 5 minutes or until the bread starts to toast and the cheese is just beginning to melt. Serve with some fresh rocket leaves.
