Roast shoulder of lamb with redcurrant and rosemary
This is a stunning yet simple dish. With the sweetness of the lamb being complimented to perfection by the Redcurrant and Rosemary.

Method

Remove the bone from your shoulder of lamb, ( your butcher will do this, if your ask him), and simply spread some of The Wooden Spoon Preserving company Redcurrant Jelly liberally over it, then place slices of fresh garlic and a few sprigs of fresh Rosemary on the jelly.

Next carefully roll the meat and secure with string or skewers.
Roast slowly on a low heat, so that all the flavours infuse together.
Serve with Crispy roast potatoes, new potatoes, and fresh seasonal vegetables.
