| Mango chutney goan style |

Made in the traditional method, this chutney is fruity and hot. Ingredients 750g mangoes, semi-ripe, firm, peeled, stoned and diced 500g suger 125ml palm vinegar or cider vinegar 75g fresh root ginger, cut into pieces 4 cloves garlic 3 tsp black mustard seed 2 tbsp red chilli powder 125g sultanas or raisens 1-2 tbsp salt or to taste Method Place the mangoes, sugar and 100ml of vinegar in a large saucepan and bring to a steady boil. Using a blender, puree the ginger, garlic and half the mustard seeds with the remaining vinegar. Carefully stir this into the bubbling mango mixture with the remaining ingredients. Continue to steadily cook until the mangoes are tender and jam-like. Bottle into warm, clean, sterilised jars and seal.
